Vicksburg Farmers' Market

Just Desserts Fine Pastries & Artisan Breads WILL be at the Farmer's Market on Saturday, July 31. However they will be closed August 7 and 14 and will RETURN on August 21. They will have plenty of all items tomorrow for those who may want to purchase ahead. Stock up.

Master Gardeners present Butterfly Gardens

RECYCLING is available. Bring your aluminum cans and #1 and #2 plastics down to the market.

Baked goods, fresh veggies, and Smith County watermelons.

While we appreciate your enthusiasm, please know that market rules prohibit vendors from selling before 8:00 a.m. Feel free to catch a few extra minutes of sleep on your weekend morning!

TOMATO AND WATERMELON SALAD
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Yield: Serves 4 to 6

INGREDIENTS

3 or 4 small to medium heirloom tomatoes, in assorted colors, cored and cut into 3/4-inch chunks
1 small English or regular cucumber, peeled, seeded, and cut into 3/4-inch cubes
1 cup 3/4-inch-cubed yellow or red seedless watermelon flesh
1 Hass avocado, halved, pitted, peeled, and cut into 3/4-inch cubes
1 tablespoon chopped mixed fresh herbs, in any combination: basil, tarragon, chives, and cilantro
1/4 teaspoon coriander seed
3 tablespoons extra virgin olive oil
3 tablespoons aged balsamic vinegar
Kosher salt and freshly ground black pepper

PREPARATION

In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and herbs. In a spice grinder, grind the coriander seeds to a fine powder. Add the ground coriander to the tomato mixture and toss gently.

In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper to taste. Pour over the tomato mixture and toss to coat evenly. Taste and adjust the seasoning before serving.

In addition to all the great vendors, the Vicksburg Farmers' Market depends on the help of volunteers each Saturday. If you're willing to sign up for a Saturday shift, please e-mail vicksburgfarmersmarket@gmail.com. Volunteers typically sell soft drinks (funds support market advertising), answer customer questions, and assist vendors -- when needed -- to set up booths. As the summer wears on, we'll need more help. Please don't just shop the market. Volunteer to work on a market Saturday if you'd like to see this great summer event continue!
